Serves 4
Prep time: 20
Cook time: 125 mins

This is a single pot and you can put in as much or as little and variety of vegetables.  Stick it in to the oven then that’s it let it cook and enjoy.  I can only list what I used but as I say let your imagination run wild experiment.

Ingredients

1 large sweet potato
3 medium carrots
6 Cheery tomatoes
1 garlic clove chopped
1 little piece of ginger
1 stick of celery
6 baby potatoes cut in half
6 cauliflower fleurets
6 broccoli fleurets
6 sprouts cut in half (Optional I had some in the fridge so why not)
6 button mushrooms cut in half
2 chicken breasts seasoned
1 tsp Oregano salt and pepper to taste.

The sauce
I tsp butter melted in a pan to make a rue
1 tsp flour
600 mil chicken stock
1 tsp clear honey
1 tsp Dijon mustard
1 tsp wholegrain mustard

Method

Peel and chop up the carrots, celery and sweet potatoes in to bite size pieces and place it in an oven proof dish, add a little Olive Oil and red wine vinegar (around a 1 tbs of each) then add the oregano and give it a good stir. Place it in the oven pre heated to 180 degrees and cover with a lid or foil. Let it cook for around 20 mins.
In the mean take the baby potatoes and cauliflower and sprouts in my case and put them in to a microwave for about 4 minutes. then set aside.
Make the rue with the melted butter and flour and slowly add the chicken stock stirring it all the time, once all the stock is added it will be slightly runny it will thicken up in the oven. Add the mustard and honey and stir until fully combined.
take the dish out of the oven add the rest of the vegetable and pour the honey mustard stock over it all place the lid back on the pot and put it back into the oven after around 30 mins take it out give it a good stir and then add the seasoned chicken breasts and put it back in for the another 30 minutes.
after hour remove the lid or cover give it another stir and then put it back into the oven for 10 mins just to give you a charred look. Serve with side dish of your choice I used jacket potatoes but will go well with dumplings or mashed potatoes. Enjoy
