Saw this on an American site and thought it’s worth a try and guess what it was well worth it.  Quick and filling can be severed on it’s own or with a curry. I thought you could also use minced beef with the onions then add that to the rice and wow a simple Indian meat rice meal!!

Ingredients

4 tablespoons virgin coconut oil ( I used Olive Oil just as good)
1 large red onion, thinly sliced
1 cup whole cashews
1 cup dried red raisins (I used some dried cranberries)
1 cup dry white basmati rice, cooked according to package directions (3 cups cooked) 1 tablespoons ghee
2 cup frozen pea & carrot blend
2 cloves
1 small cinnamon stick
Salt to taste
1 cup chopped oregano stems
Oregano leaves, to garnish

Method

In a large wok or large non stick frying pan, sauté red onion in 3 tablespoons of oil on medium heat until caramelized to dark brown. Season with 1⁄4 teaspoon salt and pepper
Remove the onions when cooked set aside
Then put in the cinnamon stick and cloves in to the same pan with a little more oil. The Cinnamon needs to be turning red then add the rest of the ingredients including the onions you set aside, except the rice. Once that is cooked ( a couple of mins keep stirring) add the rice and stir in well then add the Oregano and away you go server with a curry or and type of meat or as a stand alone dish.
